Tepache
This is one of those recipes I found online and make when I have a pineapple. It's especially good in the summer cold from the fridge. It a drink that's polarizing, you'll either love it or hate it. But if you like fermented foods or drinks like kefir or kombucha you'll probably like this.
Ingredients
- 1 litre of water
- 1 pineapple core and skin (washed in filtered water)
- 100g panela (or other raw brown sugar)
- Spices (Cinnamon stick, Ginger or something else - optional)
Method
- Trim the skin and core from pineapple, then eat the nice bits.
- Transfer the skin and core to a clean and sterilised glass jar.
- Mix the sugar in to the water so it’s dissolved, then pour into jar.
- Secure the top with cheesecloth or similar, to keep out insects.
- Check daily. Depending on the temperature it should be done in 24 hours.
- Once done (it should be mildly fizzy). Strain and transfer to the fridge.
- Drink diluted with water (also works with a sour beer too).
