Tepache

This is one of those recipes I found online and make when I have a pineapple. It's especially good in the summer cold from the fridge. It a drink that's polarizing, you'll either love it or hate it. But if you like fermented foods or drinks like kefir or kombucha you'll probably like this.

Ingredients

  • 1 litre of water
  • 1 pineapple core and skin (washed in filtered water)
  • 100g panela (or other raw brown sugar)
  • Spices (Cinnamon stick, Ginger or something else - optional)

Method

  1. Trim the skin and core from pineapple, then eat the nice bits.
  2. Transfer the skin and core to a clean and sterilised glass jar.
  3. Mix the sugar in to the water so it’s dissolved, then pour into jar.
  4. Secure the top with cheesecloth or similar, to keep out insects.
  5. Check daily. Depending on the temperature it should be done in 24 hours.
  6. Once done (it should be mildly fizzy). Strain and transfer to the fridge.
  7. Drink diluted with water (also works with a sour beer too).
